Local ingredients in a rustic setting, Il Buco has big, bold flavours and buckets of charm Located off the beaten track in an old warehouse on Islands Brygge, Il Buco is an authentic Italian eatery with great love for the craft. The interior is small yet rustic and loaded with charm. They work with organic ingredients sourced from artisan producers and sustainable farmers and change their menu according to the seasons. They also run an in-house bakery that specialises in a variety of bread and pastries.During my visit, I ordered croquettes made from the blood and lugs of Birthesminde pigs, and a red deer (from Nordvildt) carpaccio with fermented birch syrup and blackcurrants. Both brilliant. Then, a whole haddock that had been slow-cooked over charcoal. The accompanying dairy sauce is local, as is everything else - Gigas oysters from Limfjorden, apples from Kysøko, Danish tomatoes and potatoes from Lykkesholm and Alouette.
