A very fascinating restaurant in Singapore. The cuisine is extremely intellectual. Chef Ivan Brehm calls it ‘crossroads cooking’ and it’s basically the intersections of how cultures across the world have more similarities than they have differences. His cuisine is based on that and I find that quite fascinating.
