Best quality pizza in Bangkok from a visionary chef that everyone talks about.
There’s no website, just Instagram and a number to call for reservations. Just a few tables, even less pizzas —only 24-30 trays per day. Often fully booked for lunch and dinner service. Not an easy find, located on a dead-end street on the upper floor of a tenement house in soi Ekamai. The design recalls a Scandinavian vibe, minimalist, with low, trapezoidal tables in the spacious main dining and a counter seating for a few lucky ones, to watch the pizzaiolo’s work.
Ingredients from Thai producers, including local Thai mozzarella and serious pizzaiolo skills from a man who clearly knows all about Italy and Isaan - Chef Nart Menat Sikala. 48h-fermented pizza dough and classic and innovative toppings. Everyone likes a good red pizza but the whites would always be my choice such as the to-die-for carbonara. I was pleasantly surprised to see among their natural and biodynamic wine list a selection from Hilberg Pasquero including an exquisite bottle of Vareij. That alone for me says a lot about their attitude towards flavorful, quality products and where their minds are at.
