Diego Rossi is the chef behind the renowned trattoria Trippa in Milan. Born in Verona, he entered catering school and then worked at starred restaurants like St. Hubertus with chef Norbert Niederkofler, before opening Trippa in Milan in 2015. With Trippa, Diego Rossi took a leap away from the starred fine dining cooking to the casual trattoria style. In his cooking at Trippa, Rossi pays respect to the products and has a nose to tail-attitude in his use of produce, be it meat, fish or vegetables.
