Creative, beautifully presented sushi. I was initially attracted to the place because of a claimed ethos to use only fish and shellfish that are sustainable, and non-aqua-cultured. And while the eschew the ubiquitous salmon here, all but one of the offerings from the sushi bar are either classified as "avoid" due to unsustainability or are aqua-cultured, so the salmon is a "protest vote" of limited import. That said, the sushi is of excellent quality, and the combinations, particularly of their nigiri presentations are delightful.
