Sushi Matsuura remains a classic one Michelin star dinner in Tokyo. A safe expression of one of the most iconic Omakase experience, with only 10 seats and a single party. The sequence changes according to the type of fish arrived on the day but the sequence is pretty much rooted in tradition. Several marinated raw fish, many sea urchins, great flambé tuna, fatty tuna steak with raw egg and plain rice with raw egg, amazing tobiko, chawanmushi and then sushi series. You really eat a lot and not too fast so this is particularly enjoyable. Best ending part with unagi nigiri.
